Whisk the premix with water into a free-flowing, lump-free batter.
Rest for 10 minutes to let the batter relax.
Heat a tawa, pour a ladle of batter and spread in a thin circular motion.
Drizzle oil or ghee around the edges and cook until deep golden.
Fold in half or roll, and serve immediately with sambhar and chutney.
