The test of a good idli isn't how it looks straight out of the steamer โ it's whether it's still soft twenty minutes later in a lunchbox. Preparation, Step by Step
Mix the premix with water to a thick, dropping-consistency batter.
Rest for 5 minutes while you grease the idli plates.
Spoon batter into each mould, filling three-quarters full.
Steam for 10โ12 minutes until a knife inserted comes out clean.
Rest 2 minutes before unmoulding; serve hot with sambhar and coconut chutney.
